Working Method:
  • Mixing Spiral - 5 min slow-8 min fast 
  • Dough Temperature - 80°F 
  • Bulk fermentation - 75 min 
  • Scale - 4.5 lb pieces for full sheet pan and spread on Olive oiled pan 
  • Intermediate proof - 30 minutes 
  • Make Up - Keep spreading on pan until covered 
  • Final Fermentation - 30 min at room temperature 
  • Decoration before baking - Finger dock with olive oil water mix 50/50 
  • Oven temperature °F - 450 °F 
  • Baking Time - 27 min
