Manipulation Before Scaling
If needed, spray some water on the top part of the dough and sprinkle with the Graindesign Black and White.

Scaling Manipulation
Gently flatten the dough with a heigh of 50 cm. Cut bands on the heigh to have 350g dough pieces (50x5cm) and twist the band to obtain 3 layers of grains on the top. Place the twisted baguette on a cloth previously floured.
Tips & Tricks: By covering the dough with plastic during the bulk fermentaitonm you will creat condensation. That will help to make the Graindesign sticking to the top, if needed, spray some extra water.
