Working Method
  • Slowly heat chocolate until 120 F. 
  • Combine dragon fruit powder with chocolate until well incorporated. 
  • Using a palette knife spread chocolate over a half sheet pan that is layered with a guitar sheet. 
  • Sprinkle generously pistachio, chopped pineapple and coconut before chocolate sets. 
  • For best results shock freeze.
