Strawberry Smoobee Nougat

Working Method
  • Combine first sugar with both egg whites in a bowl with a whip attachment and set aside 
  • Warm inclusions in a bowl at 250F 
  • Combine second sugar with glucose, water, and vanilla in a pan 
  • Cook honey to 248F (start whipping whites when 226F) 
  • Pour Honey into whipping whites and start the pan with sugar 
  • Remove vanilla bean and pour into whites when 311F 
  • Whip on high for 3.5 minutes 
  • Mix in inclusions by hand 
  • Pour onto a sheet tray with sifted confectioners sugar 
  • Form a slab and cool to room temperature before cutting
