Strawberry Lemon Swiss Roll

Working Method

Genoise Cake
  • Mix the water, eggs and mix on low for one minute. Scrape the bowl. 
  • Mix on high for 8 minutes. 
  • Add the Smoobees and mix the batter just until they are incorporated. 
  • Spread in 2 sheets – 7mm thick. 
  • Bake at 400⁰F for 6-8 minutes.

Strawberry Filling
  • Mix until incorporated.

Strawberry Center
  • Bloom the gelatine in cold water for 5 minutes. 
  • Melt the gelatine and mix it into the Topfil Plus Strawberry Filling. 
  • Freeze in a round cylinder.

Decoration
  • Spread a very thin layer of Vivafil Strawberry on the sheet of Genoise, and then the Strawberry Silky Smooth. 
  • Put the frozen strawberry Topfil on one end and roll it up. Brush it with Miroir. 
  • Garnish with more Silky Smooth, lemon and chocolate garnishes.
