  • Roasted Crickets

Instructions

Tajin Praline Method
  • Melt lait selection, noir selection, and cocoa butter 104°F, add praline and tajin. 
  • Temper to 174°F deposit in crystalized mold with roasted crickets. 
  • Allow to crystalize and then seal. 
  • Garnish with caramelized roasted cricket
