1. Place all ingredients (excluding cranberries, shredded carrots and apples) in spiral mixer and mix for 5 minutes at low speed then 8 minutes at higher speed until full dough development.
2. Incorporate apples, carrots and cranberries and mix at low speed for 2 minutes followed by 1 minute of high speed mixing.
3. Allow the dough to rest for 1hr.
4. Divide dough into 500g pieces and round.
5. Allow dough to rest for 10 minutes.
6. Mold into flame shape as depicted.
7. Place on semolina-lined board or baker's cloth (couche).
8. Proof for 1hr-1hr 15 minutes at 95°F.
9. Once proofed, cut edges of dough as depicted before placing into oven.
10. Bake 450°F for 16-21 minutes with steam. Vent for last 5 mintues of baking.
