Deposit into bagel shaped flexi mold, allow to crystalize minimum 12 hours at 18C with less than 60% humidity
Remove from mold, enrobe in Belcolade Noir Selection garnish with decoration (seed, garlic, chive, onion, salt) allow to crystalize minimum 2 hours at 18C with less than 60% humidity
Decoration
Dry roast millet seed and white sesame seeds at 180C until golden brown, allow to cool
Mix all ingredients together and use to decorate enrobed "bagel"
