Lemon Smoobies Mousse Method
Whip the Ambiante to a soft peak and fold it on top of the Deli Citron.
Add the Smoobees.
Pipe 25g into a silicon mold the size of the whoopie pie and freeze.
Macaron Method
Sift almond flour and confectioner's sugar together.
Whip 6 oz. (170g) of egg whites and the granulated sugar for 10 minutes on 2nd speed.
Stir 1.25oz (35g) of egg whites into the glour and sugar mixtre and fold into the whipped egg whites.
Pipe mixture onto silpat. Tap bottom of pan.
Dry at room tempature before baking. Macaroons are ready for the oven when they are dry to the touch.
Bake in a 350ºF deck oven. The macaroons are done when they are firm to the touch and have not begun to crack.
Assembly Method
Unmold the mousse and place on the whoopie pie.
Top with a macaroon.
