Cake Batter Method

With a paddle attachment, mix all ingredients together for 1 minute on low speed, scape the bowl, and continue mixing for 3 minutes on medium speed.

  • Bottom Tempature: 350ºF

Lemon Smoobies Mousse Method
  • Whip the Ambiante to a soft peak and fold it on top of the Deli Citron. 
  • Add the Smoobees. 
  • Pipe 25g into a silicon mold the size of the whoopie pie and freeze.

Macaron Method
  • Sift almond flour and confectioner's sugar together.
  • Whip 6 oz. (170g) of egg whites and the granulated sugar for 10 minutes on 2nd speed. 
  • Stir 1.25oz (35g) of egg whites into the glour and sugar mixtre and fold into the whipped egg whites.
  • Pipe mixture onto silpat. Tap bottom of pan. 
  • Dry at room tempature before baking. Macaroons are ready for the oven when they are dry to the touch. 
  • Bake in a 350ºF deck oven. The macaroons are done when they are firm to the touch and have not begun to crack. 

Assembly Method
  • Unmold the mousse and place on the whoopie pie. 
  • Top with a macaroon.
