Instructions

Working Method:
  • Mix: 3 min. low, 9 min. high.
  • Scale dough into 28 oz pieces.
  • Round dough and give a intermediate proof of 10 minutes.
  • Mold pieces into oval shaped loaves.
  • Proof for 55-60 Min.  
  • Set Rack oven at 420° - 380°
  • Bake for 30 minute with steam or until baked.
