Method
  • Mix: 3 min. low, 9 min. high.
  • Delay yeast till last phew minutes of mixing.
  • Scale dough into 19 oz pieces.
  • Round Dough and give a intermediate proof of 10 minutes.
  • Mold pieces into oval shaped loaves.
  • Proof for 55-60 Min.
  • Set deck oven at 440°/ 425° (top & bottom heat).
  • Bake for 19 minute with steam or until baked.
