With a paddle attachment, mix all ingredients together for 1 minute on low speed, scape the bowl, and continue mixing for 3 minutes on medium speed.

Plain Cake Batter Method

Italian Meringue Method
  • Cook the sugar and the water to 116-121ºC and pour on the lightly whipped egg whites. 
  • Keep whipping at medium speed until room temperature. 

Assembly Method
Alternate piping 10 grams of Vivafil per pie and 6 grams of Italian Meringue per pie.
